Changing Video/Audio Settings and Formats

Auto Movie Creator's capture tool lets you change video settings like Output Size and Frame Rate as well as audio settings.  To change these settings, click on the Tools menu and select either CameraSettings, VideoSettings, or AudioSettings

You can also use the CameraSettings, Video Settings and Audio Settings links under Audio/Video Settings on the main Capture dialog.

The setting dialogs are driver specific and may vary between different operating systems and due to the configuration of your camera.  However, you should at least have options to change Output Size (dimensions), Frame Rate and Recording Format.
